BLACK BEAN TACO SALAD

A really great salad is harder to come by than you’d think. Luckily, our chefs are salad experts. They took all of the fillings they love from a taco and turned them into a flavor-packed feast. Imagine digging into layers of crisp lettuce, warm-spiced roasted corn and black beans, fresh tomato and scallion, sharp cheddar, creamy guac, and crunchy toasted pepitas. (Whew—yes, all of that!) It’s all tossed together with a creamy cilantro-lime dressing that’ll keep you coming back for more. If you happen to have some in your pantry, crumbled corn chips would be a delicious addition.
